Herbs for Health Recipe: Oregano – Chimichurri Sauce

Chimichurri is a zesty sauce originating from Argentina featuring parsley, garlic, oregano, red pepper flakes, vinegar and olive oil. Chimichurri is commonly served with grilled meats - adding a burst of flavour and freshness.

Not only fresh and delicious, the herbs in chimichurri are packed with health-promoting polyphenols that counter inflammation and oxidative stress. So if you want to bring some balance to your meal, be bold with the chimichurri.

For a straight-up classic...

1. Authentic Argentine Chimichurri Sauce

Ingredients: 

  • 1 bunch of parsley 
  • 4-5 gloves of garlic 
  • 2 tablespoons of dried oregano 
  • 1 tablespoon of red chili flakes 
  • 12 tablespoons of good olive oil 
  • 4 tablespoons of red wine vinegar 
  • 3-4 bay leaves 
  • Salt to taste 
  • Freshly ground black pepper to taste 

Preparation: 

  1. Rinse your parsley under cold water and pat it try before picking off the leaves from the stems (some stems are fine but we’re looking for mostly leaves here)
  2. Chop your parsley leaves as finely as you can. 
  3. For the amounts in this recipe you’ll want 4 tablespoons of very finely chopped parsley. 
  4. Once finely chopped, add your parsley to a small bowl. 
  5. Next chop or grate your garlic as finely as you can (I like to use a microplane like this one to do so, but if you don’t have one you can go ahead and chop your garlic using a knife). 
  6. You’ll want about 2 tablespoons of finely grated/chopped garlic. 
  7. Once finely chopped/grated, add your garlic into the bowl with the parsley. 
  8. Add 2 tablespoons of dried oregano to the bowl. 
  9. Add 1 tablespoon of dried red chilli flakes 
  10. Add 3-4 dried bay leaves 
  11. Add 3 tablespoons of olive oil followed by 1 tablespoon of red wine vinegar
  12. Repeat step 3 until you’re happy with the consistency of the sauce
  13. Add salt and freshly ground pepper to taste.
  14. Give everything a good mix and you’re done!

2. Chimichurri – The condiment of the summer!

Ingredients: 

  • Large handful of fresh parsley
  • 2 cloves garlic
  • 75 g olive oil
  • 20 g red wine vinegar
  • Sprinkle dried oregano
  • Sprinkle red pepper flakes
  • Salt to taste
  • 10 cranks of black pepper

Preparation: 

1. Finely chop the parsley, and mince the garlic.
2. Add vegetables to a bowl set over a scale.
3. Add the olive oil, and red wine vinegar. Mix together.
4. Sprinkle in the dried oregano, red pepper flakes, salt, and black pepper.
5. Adjust the flavors as needed.
