Gribiche is a classic French sauce starring hard-boiled eggs, which gets its briny kick from cornichons and capers, and it elevates this super simple veggie pizza to something a little bit special.

Here is a recipe for Gribiche with Tarragon Herb:

Ingredients:

  • 2 large store-bought pizza bases (about 30cm)
  • 2 large potatoes, thinly sliced using a mandolin
  • ¼ cup extra virgin olive oil
  • 1 bunch asparagus, shaved
  • 2 eggs
  • ¼ cup cornichons, finely chopped
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 1 tbsp finely chopped tarragon, plus extra sprigs to serve

Instructions:

  1. Preheat the oven to 200C fan-forced (220C conventional). Place pizza bases on two large baking trays lined with baking paper.
  2. Toss the potatoes with 1 tablespoon of the oil and season with salt and pepper. Arrange over the pizza bases. Top with asparagus and bake for 20 minutes or until potatoes are golden and cooked through.
  3. Meanwhile, cook the eggs in boiling water for 8 minutes, drain and refresh in iced water. Peel and roughly chop. Place in a small bowl, add cornichons, mustard, lemon juice, remaining olive oil and chopped tarragon. Season with salt and pepper and gently toss to combine.
  4. Top the pizza with sauce gribiche and extra tarragon and serve.

    Spring Roasted Chicken With Tarragon Recipe

    Here's how you can easily roast chicken with tarragon herb for Christmas:

    Ingredients:

    • 1 whole chicken, about 1.3kg
    • 25g unsalted butter, softened
    • 1 x 30g pack fresh tarragon
    • a sprig of fresh thyme
    • 200ml white wine
    • 1 x 300g bag shallots, peeled
    • 1 garlic bulb
    • 175g Woodside Farms unsmoked bacon
    • 150g peas, defrosted if frozen or blanched if fresh
    • Potatoes, to serve
    • Mixed vegetables, to serve

    Instructions:

    1. Preheat the oven gas to 5, 190°C. Put the chicken in a roasting tray. Smear the butter all over and season well.
    2. Put a large sprig of the tarragon and the thyme into the cavity and pour the wine around, adding a splash of water as well.
    3. Roast for 30 mins, then add the whole shallots, bacon and garlic to the tin. Roast for another 40 minutes, adding a splash more water if the juices in the roasting tray dry up. Lift the chicken with some tongs so the juices run from the cavity. The chicken is cooked if the juices are clear - if they're still slightly pink, cook for a further 10 mins.
    4. Stir the peas into the juices around the bird and scatter with some fresh tarragon. Allow to sit for 10 mins, then remove from the roasting tin and carve.
    5. Reduce the juices a little to make some gravy and serve with new potatoes and vegetables or salad.

    Cooking tip: If you've got leftover chicken, turn it into a tasty and quick chicken salad. Shred the meat and toss it together with boiled baby new potatoes and mixed salad leaves. Just before serving, dress it with extra virgin olive oil and lemon juice or balsamic vinegar.

    Instructions:

    1. Wash, dry and chop the parsley, chervil, tarragon and chives
    2. Break the eggs into a bowl and lightly beat them. Season with salt and pepper and add the chopped herbs, mixing well.
    3. Heat half of the oil in a very large frying pan then pour in half the egg mixture, cook until the edges of the omelette are done and then carefully turn it over and continue to cook for a further 2 -3–minutes until fully cooked.
    4. Slip the omelette onto a dish and keep warm. Repeat this process, making 2 omelettes.
    5. Place the sliced ham over the omelettes and roll up tightly.
    6. Slice each omelette into three.

    • A little tarragon goes a long way, so start with a small amount and add more to taste.
    • Tarragon pairs well with chicken, fish, lamb, vegetables, and eggs.
